‘White meat'

white meat

‘White meat' products of typical Tuscan farms are staples par excellence, including chickens, turkeys, geese, guinea fowl, pigeons and rabbits. Above all is the pig - known world-over for its starring roles in Tuscan salami, prosciutto, and sausages - all testaments of the ingenuity of poor rural inhabitants over the millennia. In addition, the countryside yields wild boar, pheasant and porcupine to the menu. The Cinta Senese pig, bred in the wild and semi-wild throughout the province of Siena, is known for the wide white-colored band around its neck on an otherwise slate gray hide, and its highly-prized ham steaks, sauces and bacon.
